I remember it well, when at the age of six, I was asked what I wanted to be when I grew up. The answer was always the same: My dream was to become a successful chef, specialized in the art of pastry. A wish that, to this day, I can say I have fulfilled, while still committing myself to the research and study of an ever-evolving cuisine. I would like to share with you my concept of pastry by teaching those who share my same passions the knowledge I have gained over the years, the best techniques, and some secrets to shape and flavor your imagination. I am convinced that no one should ever give up the pleasure of a good dessert, nor should they give up on a dream.

The basics of pastry making (90 video lessions)

I've decided to start our journey from the basics of pastry making. From shortcrust pastry, moving on to sponge cake, shortcrust pastry again, biscuit, both basic and compound creams, almond frangipane, pâte à choux, and much more. We will continue with the application of these basics to create creamy cakes, baked cakes, miniature pastries, tarts, spoon desserts, and savory pastry.

CLASSIC ITALIAN AND INTERNATIONAL CAKES

The time has come to take a step forward. Have you studied the basics in my first course? Good, now you will learn to apply them in 14 Classic Cakes, both Italian and international.

Flavor, color, and execution perfection are the ingredients of this course. The course is divided into two modules. The first is dedicated to classic Italian cakes, while the second focuses on classic international cakes, offering a rich and tempting cake menu.

BREAKFAST LEAVENED GOODS

We will approach the vast world of leavening to learn how to best manage leavened doughs, from kneading and rising to baking and storage.

In 10 lessons, we will range from laminated dough for croissants, exploring the differences with a great and timeless classic, the Italian cornetto, to simple leavened dough for brioches. We will discuss yeasts, fats, and the balancing of the main doughs to explore all their variations. To complete the course, a careful and detailed examination of different fillings, glazes, and aesthetic finishes.

THE SEMIFREDDOS

Technique, theory, and balancing to discover the fantastic world of creams served at -18°C.

The first module will be dedicated to Parfaits, where the semifreddo base is the star. The second will be cooler: The Biscuit Glacé, where Italian meringue and tart fruit take center stage. The third module focuses on Italian semifreddo, where custard cream is the protagonist, dominating with its creaminess and full flavor, thanks to the custard's starch content.
