ARANCINE WITH RICE AND MEAT

The origin of arancine can be placed during the Arab domination in Sicily, between the 9th and 11th centuries. The Arabs used to roll some saffron rice in the palm of the hand and then season it with lamb meat. Arancine are one of the most popular recipe in Sicily. They are the perfect street food, in fact we can find them in all the market stalls, and a delicious “antipasto” that you can find in the restaurant menus. According to the tradition, especially in Palermo, on St. Lucia’s Day pasta and bread are banned: you can eat arancine and all the rice products instead.

MEZZI RIGATONI ALLA CARBONARA

Carbonara is one of the most discussed and best known dishes of Roman cuisine. It is said that pasta alla carbonara was created by a Roman chef in 1944. He took inspiration from the ingredients loved by the American soldiers: eggs, bacon and cheese. Many changes occurred over time, for example bacon has been replaced by guanciale.

TRADITIONAL RISOTTO WITH MUSHROOMS

Rice is divided into two main families which are Japonica and Indica. Over time, Italy has become the largest European producer of rice of the original Japonico strain. The Indica variety, with elongated and narrow grains, is a quality of rice with low quantities of starch. It is the most used for pilaf and oriental cooking because the grain remains fragrant and shelly. The most marketed in Italy are Patna, Jasmine and the best known Basmati.

    In this course you will learn the basic techniques and all the tricks you need to prepare the recipes.

  • How many lessons do you offer in this course?

    The course consists of 10 video lessons, 10 handouts, interactive discussions, a theoretical exam, a practical exam and a final personal certificate of completion.

  • How long do I have access to the course?

    After enrolling, you will have 50 days to finish the course and take the exams to receive your personal certificate of completion.

  • Can I rewatch a lesson?

    Of course, by enrolling in the course you will be able to watch and re-watch all the video lessons without any limits, on PC, Tablet and Smartphone.

  • Is it easy to follow the course?

    The lessons are clear and detailed and can be completed successfully.

  • How long does it take to finish the course?

    It depends on you. Remember that you have 50 days to take the exams and obtain your personal certificate of completion.

  • How can I get help?

    In each video lesson you will find interactive discussions with our Tutors. You can ask your question and one of our tutors will answer you directly via email.

  • How do exams and final certificate work?

    At the end of the course you have to pass 2 exams, a theoretical one: multiple choice questions to be completed online, and a practical exam: in short, you have to prepare one of the lessons' recipes at home and send a photo of your preparation which will be evaluated by our Tutors. If the course completion percentage is 100% you will receive the link via email to download and print your personal certificate of completion.
