The origin of arancine can be placed during the Arab domination in Sicily, between the 9th and 11th
centuries. The Arabs used to roll some saffron rice in the palm of the hand and then season it with lamb
meat.
Arancine are one of the most popular recipe in Sicily. They are the perfect street food, in fact we can
find them in all the market stalls, and a delicious “antipasto” that you can find in the restaurant menus.
According to the tradition, especially in Palermo, on St. Lucia’s Day pasta and bread are banned: you can eat arancine and all the rice products instead.
